Hope is not lost: more Social Businesses

While Wall Street is now playing with our food (as it did with our houses earlier and transferred even more wealth to already wealthy people) all hope is not lost thanks for new emerging social businesses that invest their profits into sustainable projects rather than pocket them. I spoke earlier about Belu Water which invests its profits into clean water projects (oh clean water is so important for our health) and Belu is now turning up in even more restaurants in the UK which is great. Now I have found yet another main stream social business here in the UK. This on is called One. Their main product are Eggs which are called One Good Egg. They are sold in mainstream supermarkets.
 
If you care about our future whenever you shop, shop as many social business products as they genuinely help to transform the planet to a more sustainable place, a happier place to live. This is opposite to what some individuals in Wall Street are trying to achieve. 

Proven: Western diet makes us ill

Good article written by a physician about real evidence about what our eating habits are doing to us. Essentially our organs are covered in a layer of fat which certainly cannot be healthy. 

"Typical Afghan civilians and soldiers would have been 140 pounds or so as adults. And when we operated on them, what we were aware of was the absence of any fat or any adipose tissue underneath the skin," Patterson says. "Of course, when we operated on Canadians or Americans or Europeans, what was normal was to have most of the organs encased in fat. It had a visceral potency to it when you could see it directly there."

A healthy diet is a diet without sugar, excess fats and lots of green stuff. Read more about food from my Food page. Yes it is a big thing to change your diet but if you want to live healthier and longer there is only one thing to do. Eat better. This will also reduce greenhouse emissions if you do.

Another successful Social Business: Belu Water in the UK

The best about this case is that they (Belu) donate their profits to clear water projects around the world thus being a true Social Business. Great to see proper real life social businesses going well. They also mostly use glass packaging or recycled plastic in their bottles too. And they are carbon neutral which is even better. Now rest of the World please follow this example and we have a happy world. If you are in the UK and buy bottled water buy Belu since it helps the planet rather than destroys it as many businesses unfortunately do.

You can read more about Social Business from this book written by Muhammed Yunnus (Nobel price winner), perhaps this is the Capitalism 2.0, profits go to improve the environment and reducing poverty rather than for private luxury yachts which are unnecessary anyway. I like it. 

Reducing artificial ingredients in food increases sales

One good article in a Finnish newspaper where one company removed MSG (monosodium glutamate) from their meat products and the company profits increased by 10%. This of course was linked into a large discussion in the one and only Finnish newspaper HS.fi which increased consumers awareness of the potential health issues linked to the use of MSG.

But one step in right direction, this is a very good indication that producing more healthy stuff can also increase company profits, green and ecological things do not always mean costs or just good PR it can also mean actual increase in product demand. Consumer awareness is increasing on health and ecological issues and this impacts their shopping behaviour. And anyway organic, less produced stuff is more in demand nowadays and its good for you. 

Boo Google - deletes YouTube accounts without explanation

Another reason starting to dislike Google's products which I have been a big fan of previously. This guy is producing a very good show of alternative food stuff with hundreds of videos in YouTube with lots of followers - Google just turned him off without any explanation. I have known this to happen for other users too with alternative subjects. Seems best to use other online video services if you want to keep control of your videos. In case of Google there is also no way of contacting them or being able to discuss with them. Essentially no customer service. Boo Google. Lets move out of Google services, Google is getting too big.

Really good cooking clip: Jamie Oliver: Principles of superb salads

I just love Jamie, clips are fresh and useful. This kind of re-energizes the entire approach to salads which sometimes can feel boring to do / eat. I am lining up in the kitchen already to prepare a wonderful salad!

Finnish Earth Oven Roast (rosvopaisti)

Earlier this summer I prepared an earth over roast (rosvopaisti) in Finnish style. Later this year I am going to do it in Peruvian style in Peru. The Finnish version is simply a "hole" in the ground - about 80cm deep. You need to then create the "oven" from medium sized ideally round rocks. You layer them at the bottom of the "hole" in the ground. This is the heat storage which will ultimately cook the food.

In the Peruvian version (Pachamanca) the rocks form an oven, however in this Finnish version the rocks are just at the bottom (or also at the sides but I was a bit lazy). Then you keep a fire on top of the rocks for about 5-6 hours - yes that long. Rule of thumb seems to be 1 hr per each kilo of meat both for pre-heating and cooking. Yes for both. Takes an entire day. I started pre-heating 8am and the dinner was served about 6-7pm.

The meat is marinated for a day or too. I had a leg of lamb and a piece of pork. The lamb was marinated with salt, pepper, oil and with fresh mint and rosemary. And yes plenty of garlic (3 bulbs I think). The pork was marinated with sage, pepper, salt and oil. Simple but very good.  I wrapped the meats in baking paper (few layers) and in tinfoil (few layers) - left in the fridge.

When the pre-heating is complete you move the hot ash on the side first. Then you wrap the meats further with wet newspaper and then complete the packaging with a wire mesh to keep it all together. Then you just drop it on top of the stones and move the earth and the hot ashes on top of it to cover fully and keep the heat it. Then you set a further small fire on top of earth oven to make sure the meat is also cooked from the top. Then just wait for 5-6 hours (while keeping the small fire going at the top) and then open the whole thing. As a result you should have an amazing earthy meat experience. At least my guests were satisfied. If you cook veggies along the meat, add them into the oven for about 1.5 - 2 hours in the end (you need to leave space for them - I used a metal divider to make it easier) and do not wrap the veggies with newspaper - just with baking paper and tinfoil.

Later this year I will try this with the Peruvian style where you do not use any baking paper or tinfoil at all.
